The traditional balsamic vinegar is aged for minimum 12 years in wide oak barrels. They start from the barrique and finish in smaller and smaller barrels to refine the flavour. The taste of this vinegar is very sweet and refined, it almost tastes like a syrup! The tasting is crucial to understand the product. The small bottles of 100 ml have three labels: red (12-20 years), silver (20-25 years) and gold (starting from 25 years and older).
